Vegan Blueberry Muffins

Well, sort of. I didn’t have all the ingredients to make real vegan blueberry muffins using this recipe, so I free styled off of it to make my own eggless (I used cow milk, rather than soy) version. They came out delicious!

SERVES 12

Ingredients:
1/4 cup margarine
1/2 cup unsweetened applesauce
1/2 tsp. salt
1 cup granulated sugar
2 cups all-purpose flour
1 T baking powder
2 T vanilla yogurt
2 T flax seed
1/2 cup low fat milk
2 cups fresh blueberries

DIRECTIONS

Preheat oven to 350F. Line 1/3-cup muffin cups with paper liners, or spray with cooking spray.
Mix all ingredients together in mixing bowl. Spoon into muffin cups, filling three-quarters full.
Bake 35 minutes, or until tops are firm. Cool slightly on rack.
