Vegetable Quesadillas: CSA recipe #2

Tonight we used up the swiss chard to make vegetable quesadillas – another recipe we found on BigOven.com. I combined that with some fresh, homemade salsa and strawberries.

Delicious! Probably the best quesadilla I’ve ever had. Here’s the version of the recipe I made:

Ingredients:

  • 1 Zucchini, chopped
  • 1/2 Onion sliced and cut into short lengths
  • 1/2 Yellow Bell Pepper, chopped
  • 5 Mushrooms, sliced
  • 1 bunch Swiss chard, hand shredded
  • Cumin
  • Chili powder
  • Salt
  • Pepper
  • 2 T Oil for cooking
  • 2 cups Cheddar cheese
  • 4 Large burrito shells

Preparation:
Heat a skillet medium heat.  Add the oil and add the onion when hot.  Saute for a couple minutes. Then add the peppers, mushrooms, and squash.  Cook until almost done, but still tender.  Add the spices (cumin through pepper) to taste (I just did a dash of each), stir once or twice, then add the chopped chard.  Cook until chard is wilted and remove from heat.

Make quesadillas using large tortillas. On one half, add a layer of cheese, then a layer of vegetables, then another layer of cheese. Fold over other half and cook on medium heat until each side is done to liking.

    I love that you guys are posting recipes that you use your Porter Farms veggies for…since we get the same veggies as you each week, it gives me great ideas too!
